nutella croissants two ways



These Nutella croissants are a favorite at our house. While all these croissants are filled with Nutella, the ones in the first picture have a yeast dough base, and the ones in the second picture are made with a cream cheese dough base. They are both equally delicious and very easy to make. I posted both recipes bellow.


RECIPES


Nutella croissants (yeast dough recipe)

INGREDIENTS

  • 1/2 cup whole milk, plus 1 tablespoon for brushing

  • 1 tablespoon dry yeast

  • 4 cups all-purpose flour, plus

  • 1/2 cup sugar

  • 5 tablespoons unsalted butter, room temperature

  • 2 eggs, plus 1 egg yolk

  • 12 tablespoons Nutella

  • 1/2 cup confectioner's sugar

INSTRUCTIONS

  1. In a small saucepan warm the milk until just warm to touch (milk needs to be warm, not hot). Add the yeast to it and mix until incorporated. Set aside for 20 minutes, or until the yeast starts to bubble.

  2. In a separate bowl, add the flour, sugar, butter, and eggs. Using a stand mixer start combining the ingredients while pouring the milk mixture little at a time. Knead the dough until it starts to come together. If the dough is too sticky, add more flour little at a time. Knead for additional five minutes, then cover the bowl with plastic wrap and let the dough rise in a warm place for two hours.

  3. When the dough has risen, take it out the bowl and divide it into three equal parts. Roll each part into a ten inch circle, then cut it into four equal slices (similar to as you would slice a pizza).

  4. Spread a tablespoon of Nutella onto each slice, then roll them as you would a croissant: starting at the wider side, rolling towards the narrow end (you will end up with twelve individual croissants).

  5. Preheat the oven to 350 degrees F. Arrange the croissants on a parchment paper prepared baking sheet. In a separate bowl combine the egg yolk with the one tablespoon milk. Brush the croissants with this mixture, and then bake them for about 20 minutes or until golden brown.

  6. Allow for the croissants to cool completely and then coat them with confectioner's sugar.









Nutella croissants (cream cheese dough recipe)


INGREDIENTS

  • 8 ounces unsalted butter/2 sticks, room temperature

  • 1/4 cup white granulated sugar

  • 8 ounces cream cheese/1 package, room temperature

  • 2 1/2 cups all-purpose flour

  • 32 teaspoons Nutella

  • 1/2 cup confectioner's sugar

INSTRUCTIONS

  1. In a medium-sized bowl, using a hand mixer, cream the butter with the sugar for two minutes.

  2. Add the cream cheese and mix again until incorporated. Add the flour and start combining everything into a dough. The dough should be easy to work with and not sticky (see picture bellow). Cut the dough into four equal parts, wrap each part in plastic wrap and refrigerate for three hours.

  3. When the dough is chilled, roll each part into a ten inch circle, then slice it into 8 equal slices (similar to as you would slice a pizza).

  4. Spread a teaspoon of Nutella onto each slice, then roll them as you would a croissant: starting at the wider side, rolling towards the narrow end (you will end up with 32 individual croissants).

  5. Preheat the oven to 360 degrees F. Arrange the croissants on a parchment paper prepared baking sheet and bake them for about 25 minutes, or until golden brown.

  6. Allow for the croissants to cool completely and then coat them with confectioner's sugar.
